Hollandaise is traditionally served over fish, asparagus or on Eggs Benedict. Because it has always been a difficult sauce to make, the average cook has been content to make it only on very special occasions or not at all.
Hollandaise is also the foundation for several other sauces such as mousseline, mikado and mustard sauce. Our hollandaise can be converted to Béarnaise Sauce by simply stirring in 1 tablespoon of dry white wine, 1 tablespoon of finely chopped onion, 1/2 teaspoon of dried tarragon and 1/4 teaspoon of dried chervil leaves.
