Uses: Often used when beating egg whites to increase heat tolerance and volume; also used to prevent crystallization of sugar syrups.
It is naturally occurring in grape juice but is precipitated even more when wine is made from the juice.
Cream of tartar is the acid part of baking powder.
It is also used to produce a creamier texture for dessert items like frosting and candy.
